Fine-Mesh Strainer
Purpose
A bowl-shaped strainer with very fine wire mesh for straining stocks, sifting flour, removing seeds from purées, and achieving silky-smooth sauces. Catches particles that a colander would miss.
Usage
Rest over a bowl or pot using the handle and the hook on the opposite side. For stocks, ladle liquid through rather than pouring to avoid disturbing sediment. Press soft solids through with the back of a ladle for purées. Double as a sifter for flour and powdered sugar.
Buying Guide
Get two sizes: a large (20cm) for stocks and sauces, and a small (10cm) for tea and dusting. Stainless steel mesh is most durable. A reinforced rim prevents the mesh from tearing. Look for a hook opposite the handle for resting on pots.

Care & Maintenance
