Purpose

The only reliable way to know if protein is cooked to a safe temperature. Eliminates guesswork and prevents both undercooking (food safety risk) and overcooking (dry, tough result).

Usage

Insert into the thickest part of the protein, avoiding bone and fat. For thin cuts, insert from the side. Wait for the reading to stabilize (2-3 seconds for fast thermometers). Check in multiple spots for large pieces of meat. Pull proteins a few degrees below target temperature — carryover cooking will finish the job.

Buying Guide

Look for a thermometer that reads in 1-2 seconds, accurate to ±0.5°C. Avoid dial thermometers — they're slow and inaccurate. Speed matters: a slow thermometer gives you a wrong reading because you're standing with the oven open. Look for IP67 waterproof rating for easy cleaning.
