Whisk
Purpose
A multi-wire tool for incorporating air, blending mixtures, making emulsions, and ensuring lump-free sauces. The wires cut through liquids to blend ingredients that a spoon would leave streaky.
Usage
Use a figure-eight or circular motion in a tilted bowl for maximum air incorporation. For vinaigrettes and emulsions, whisk vigorously while slowly drizzling in oil. A balloon whisk works best for whipping cream and eggs; a flat whisk for pan sauces in shallow pans.
Buying Guide
A 25-30cm balloon whisk covers most needs. Choose stainless steel wires with a comfortable handle. More wires (10+) means finer blending. Consider adding a small flat whisk for sauces. Silicone-coated whisks work with non-stick cookware.
