Parmigiano-Reggiano is aged 12–36 months, developing intense umami from glutamate crystals. Grate just before using for maximum flavor. Rinds are excellent in soups and stocks. Never heat parmesan too aggressively — it becomes stringy. Add off-heat or into warm (not boiling) dishes.
