Why It Works
- Whisk the egg yolks and sugar over a bain-marie (bowl set over simmering water), stirring continuously until the mixture reaches 65°C — this pasteurizes the yolks and creates a silky zabaione
- After adding mascarpone, cool the zabaione to approximately 15°C before combining with the whipped cream
- Whip the heavy cream with vanilla to stiff peaks in a separate cold bowl; cool to 15°C or below — both mixtures should be similar in temperature before folding
- Fold the whipped cream into the zabaione gently with a spatula — do not stir or you will deflate the air you just whipped in
- Prepare the espresso by pulling two shots and adding cold water to reach 250g total; let it cool to room temperature before dipping
- Dip each ladyfinger whole for exactly 1.5 seconds — they continue to absorb liquid as the tiramisu sets, so even slight over-soaking makes the result soggy
- Arrange ladyfingers tightly in rows with the sugar-coated side facing down; trim edges as needed to fit the dish, keeping a consistent direction
- Spread cream over each ladyfinger layer at roughly the same thickness as the ladyfinger layer itself
- Dust cocoa generously through a fine-mesh strainer over each cream layer
- Grate dark chocolate (no more than 70% cocoa solids) over the first cream layer only, on top of the cocoa — this adds texture without overwhelming the delicate cream
- Refrigerate for at least 4 hours — overnight is better — so the ladyfingers soften and the layers meld together
- Dust a final layer of cocoa powder just before serving for the cleanest finish
