Why It Works

Hot fat conducts heat to the top surface of food that isn't in direct contact with the pan, cooking it from both sides simultaneously. The thin fat layer also promotes Maillard browning across the entire surface. With butter, the milk solids add toasty, nutty flavor with each pass.

Failure Modes

Avoid these common problems:

  • Opening the oven too often to baste - temperature drops, extends cooking time
  • Using a spoon that drips across the stovetop - fire hazard
  • Not tilting the pan to pool the fat - insufficient pickup
  • Basting with cold liquid - drops surface temperature
