Brining
Soaking food in a salt-water solution to improve moisture retention and seasoning throughout.
What You're Doing
Soaking food in a salt-water solution to improve moisture retention and season the food throughout. The salt denatures surface proteins for better texture.
Visual Cues
Look for these signs to know your technique is working:
- Salt fully dissolved in liquid
- Protein plumping slightly
- Surface becoming slightly translucent
Why It Works
Salt in the brine denatures surface proteins through osmosis, allowing the meat to absorb and hold more moisture. The dissolved salt also seasons the food throughout, not just on the surface.
Failure Modes
Avoid these common problems:
- Too much salt - overly salty result
- Brining too long - mushy texture
- Not refrigerating - food safety risk
- Not rinsing after - surface too salty
Requirements & Guidelines
- Use correct salt-to-water ratio (50g per litre)
- Keep refrigerated during brining
- Rinse and pat dry before cooking
