Using low, controlled heat to transition butter, chocolate, cheese, or sugar from solid to liquid state. The key is patience — gentle heat prevents scorching, separation, or seizing. Methods include direct low heat, double boiler (bain-marie), or microwave in short bursts.
Visual Cues
Look for these signs to know your technique is working:
- Edges beginning to soften and pool
- Gradual transition from solid to glossy liquid
- Butter foaming as water evaporates
- Chocolate becoming smooth and flowing
Why It Works
Fats have specific melting points: butter at 32–35°C, chocolate at 30–34°C. Heating gently to just above these points gives smooth, even melting. Too much heat causes butter to brown (which may be desired) or burn, chocolate to seize from steam contact, and cheese to break and release oil.
Failure Modes
Avoid these common problems:
- Heat too high - scorching and bitter flavors
- Steam or water contacting chocolate - immediate seizing
- Not stirring - uneven melting creates hot spots
- Melting cheese too aggressively - becomes stringy or oily
