  • Surface temperature decreasing (touch test)
  • Meat becoming easier to slice cleanly

Why It Works

During cooking, heat drives moisture from the outer layers toward the cooler center. Resting allows temperature to equalize and gives muscle proteins time to relax, letting moisture redistribute throughout.

Failure Modes

Avoid these common problems:

  • Cutting too soon - juices run out
  • Resting too long - food becomes cold
  • Not tenting - surface dries out
  • Heavy covering - crust becomes soggy
