Why It Works

In cream, fat globules partially coalesce around air bubbles, creating a stable foam. In egg whites, unfolded proteins form a network around air pockets. Sugar dissolves into the water phase, increasing viscosity and stabilizing the foam. Cold cream whips better because solid fat is more effective at trapping air.

Failure Modes

Avoid these common problems:

  • Cream too warm - won't hold air, may turn to butter
  • Any trace of fat in egg whites - prevents foaming entirely
