Chef's Knife
Purpose
The single most important tool in the kitchen. A 20-25cm blade handles 90% of cutting tasks: slicing, dicing, mincing, chopping, and even crushing garlic with the flat side.
Usage
Grip the handle with three fingers and pinch the blade's heel between thumb and forefinger for control. Use a rocking motion for mincing, and a forward push-cut for slicing. Keep the tip on the board as a pivot for fine work. A sharp knife is safer than a dull one — it requires less force and won't slip.
Buying Guide
A 20cm blade is the most versatile size for most home cooks. German-style knives are heavier and curved for rocking; Japanese-style knives are lighter and sharper for precision. Hold before buying — it should feel balanced and comfortable. A quality knife lasts decades.
