Why this matters

Why: Boiling provides rapid, even heat transfer for starchy foods like pasta and legumes. Salted water seasons from the inside and raises the boiling point slightly.
- Not enough water β starchy foods stick together
- Forgetting to salt the water β bland results no sauce can fix

Infuse
Infuse garlic and chili flakes, in large skillet, with olive oil, at 120C, 3min

Why: Tossing distributes flavour without crushing delicate ingredients like herbs or ripe tomatoes.
- Stirring instead of tossing β crushes soft ingredients
- Adding dressing too early β things go soggy
- Over-tossing β bruises leaves and releases excess water
