Grill Pan
Purpose
A heavy ridged pan that simulates outdoor grilling indoors, creating grill marks and allowing fat to drain away from food. Provides the Maillard reaction benefits of a grill without needing outdoor space.
Usage
Preheat over medium-high heat for 5 minutes. Brush food (not the pan) with oil to prevent sticking. Press food gently onto ridges for defined marks. Don't move food until grill marks have formed. Use for steaks, chicken, vegetables, and sandwiches.
Buying Guide
Cast iron gives the best heat retention and sear. Square shape provides more cooking area than round. A press (grill weight) is a useful companion for panini and chicken. Avoid non-stick grill pans — they can't achieve the necessary temperatures.
